The 4th of July is arguably my favorite holiday. It’s pretty neck and neck with Thanksgiving. But since my birthday is in July, I can’t help but have a soft spot for the 4th. It’s always been a magical time of year for me!
 
It’s like the Christmas of summer. But without the pressure of gift giving or caroling or other general merriment. Somehow, the 4th of July is a major holiday that even escapes the requirement of a fancy meal. Isn’t that awesome? It’s this big fanfare holiday, but all you have to do is throw a couple of dogs on the grill and grab a watermelon for a festive dinner party. How great is that?!

In anticipation of my favorite holiday of the year, I made Red Velvet Monster Cookies chock-full of red, white, and blue M&Ms!

Red Velvet Monster Cookies

Super soft and thick red velvet cookies with white chips and M&Ms.

INGREDIENTS

 

  • 18.25 ounce box Red Velvet cake mix (JUST the dry mix)
  • 2 eggs
  • 1/2 cup canola or vegetable oil
  • 1/4 cup flour
  • 1 cup white chips
  • 1 bag red, white, and blue M&Ms

INSTRUCTIONS

 

  1. Preheat oven to 350ºF. Line a baking sheet with parchment or a silicone mat.
  2. Reserving the white chips and M&Ms, mix all ingredients together until dough forms.
  3. Stir in the white chips and M&Ms.
  4. Scoop dough by heaping tablespoons onto prepared baking sheet, and form them into tall mounds. Bake for 8-9 minutes.
  5. Remove from oven and let cool on baking sheet for 10 minutes before removing to a wire rack.
